Gingerbread Cheesecake

Crust

1 Medifast Gingerbread Soft Bake (save back 1 tsp. for filling)

1 Medifast Cinnamon Pretzels (ground)

2 T. Water

Mix together and press in bottom of 8" cake pan.

Bake 350 deg. 12-15 min.

Cheesecake Filling

1 Cup 1% Cottage Cheese (2/3 Lean)

2 T. Low Fat Cream Cheese (2 Condiments)

3 T. Eggbeaters (1/6 Lean)

1 tsp. vanilla extract (1 condiment)

3 pkts Stevia (not Truvia) (3 condiments)

Mix all ingredients with mixer until well blended.  Place in 8" round cake pan with already cooked crust. Bake 325 deg. 50-60 mins. If using an 8" cake pan, cut into 6 or 8 pieces. Adjust your daily allowances according to the size pan you use and serving size.
